Document Style Web Services are not used to exchange all types of documents (like Word or Excel, for example); only XML documents can be transmitted. Moreover, they can only be transmitted as an instantiation of an XML Schema.
XML Schema is a kind of contract (also written in XML) to describe how an XML document must look. This is then used by the client and the server to communicate together, because they know exactly what is to be sent and what they will get.
